This is a great way to get a delicious and hearty vegetarian meal. Veggie patties are perfect for a burger or with a green salad.
Ingredients
  • 2  tablespoon [ 30gm ] Chia seeds, Black - brown
  • 1  large, 60g (standard) [ 52gm ] Egg, whole, raw (chicken)
  • 2  clove [ 6gm ] Garlic, peeled, raw
  • 6  teaspoon [ 10gm ] Mint, dried
  • 50  gram Oat bran, unprocessed
  • 12  cup [ 48gm ] Oats, rolled, raw
  • 1  onion [ 89gm ] Onion, red skinned (Spanish), peeled, raw
  • 4  teaspoon [ 16gm ] Paprika, sweet, powder
  • 14  teaspoon [ 0gm ] Pepper, black, cracked
  • 12  teaspoon [ 3gm ] Salt, rock
  • 3  tablespoon [ 63gm ] Sauce, soy, reduced salt
  • 250  gram Soup and veggie pattie mix, dried
Directions
20 minutes | Cook 70 minutes
  1. 1.
    Place the soup mix in a saucepan and cover with 5 cm of water. Bring to the boil then simmer for 30-45 minutes until tender but not mushy. Strain and set aside.

    Finely dice the onion and garlic. Fry the onion on medium-high heat for 3 minutes, add the garlic and fry another one minute. Remove from the heat. Add the roughly processed oats and stir around then tip into a large mixing bowl. Add the cooked veggie patty mix, , chia seeds, parsley, mint, paprika, salt and pepper and the egg. Mix together with a potato masher unit the patty mixture is thick and chunky mince.

    Form the mixture into ball, each, 1/3 cup of the mixture. Roll in oat bran and set aside. Repeat until all the mixture is used. There should be about 12 patties. These patties can be bakes to cook and then stored and later lightly fried off before serving. Or fried right away.

    Heat a heavy frying pay to medium heat, add 2 tablespoon of the oil and heat. Add the veggie patties and press down into the pay, to form patties the the thickness you prefer. Thinner for burgers and thicker for a salad. Fry in each side for 3 - 5 minutes or until the patty browns to a nice golden colour. Turn and brown the second side. Serve on a veggie burger or enjoy with a salad.
